A2 milk and ghee are everywhere now. Here is a plain explanation so you can decide whether they suit your family.

What does A2 mean?

Milk contains different proteins. Beta-casein is one of them and it comes mainly in two forms, A1 and A2. Milk from many Indian desi cow breeds contains mostly the A2 form. Research into whether A2 milk is better for digestion is still developing, so treat any strong claim carefully.

How traditional ghee is made

In the traditional (bilona) method, milk is set into curd, churned into butter and the butter is slowly heated until it turns into golden, aromatic ghee. It takes much more milk and time than industrial ghee, which is why it costs more.

Questions to ask before you buy

  • Which breed of cow does the milk come from?
  • Is it made from curd (bilona) or directly from cream?
  • Is anything added, such as colour or flavour?
  • How is it packed and how long does it last?

How to use ghee

A spoon on hot rice with karam podi, a drop on dosa or roti, or for sweets like laddu and bobbatlu. Ghee has a high smoke point, so it also works for shallow frying.
